Halloumi is the well-known traditional white semi-hard cheese of Cyprus. It is prepared from sheep’s milk or a mixture of sheep, goat and cow’s milk, with the addition of mint.
It has a pleasant flavour and a delicious characteristic taste. It contains a maximum moisture content of 46%, minimum fat of 43% in dry matter and 2.7% - 3% salt. It has to be kept refrigerated until it is consumed and can be easily stored for a long time at temperatures under -18°C.
Halloumi has been registered in the UK since December 1990 as a cheese product which is produced only in Cyprus using a traditional method unique to that country.
Fresh and Dry Anari
Fresh Anari is a by-product of Halloumi and other cheese products. It is an easily digestible low-fat cheese with a unique flavour. It may be eaten either fresh, especially for breakfast, or used in pastries and other desserts. Unsalted and salted types of Anari are available in the market.
Fat content: 8%, moisture: 67%.
Dry Anari is a very hard and brittle cheese with a mild salty taste. It is obtained by drying the well-salted fresh Anari, either in the sun or in an oven, until it reaches the desired hardness. Since it can not be sliced, it is used mainly as grated cheese, and is available either in small chunks or already grated. Dry Anari is widely used in the local cuisine, for casserole toppings, sprinkled on pasta, or to thicken sauces.
Kefalotyri is a hard kind of traditional Cyprus cheese prepared from 100% pasteurised sheep’s milk. It is considered as one of the best and most expensive cheeses, and its preparation is very complex. It contains a maximum moisture content of 38%, 48% fat in dry matter and 2.5% salt. Storing temperature is 5°C.
Yoghurt is produced from sheep’s milk or a mixture of sheep, goat and cow’s milk to which special cultures are added.
